We have visited the hills and shores of Lazio, the beauty of its smaller cities and the gorgeous monuments of the capital city of Rome.


我们游览了拉齐奥大区的高山和海岸,小城市的美丽和首都罗马的纪念碑还经常浮现在脑海中。



We are going to have a look at the traditional local cuisine and what can typically be found on a dining table in Rome.


我们要品尝当地的传统美食和餐桌上的别样美味。

The local cuisine, as for the rest of Italy, is of course a simple one, with fresh and seasonal ingredients from the surrounding fields, like artichokes, fava beans, salted cod and tripe.


和意大利其他地方一样,罗马的食物也十分简单,新鲜当季的食材均采自周边,比如:洋蓟芯、蚕豆、咸鳕鱼和牛肚。

Pasta is the most important dish in Italy, and Rome is not different: with Amatriciana, a past sauce based on cured pork cheek, pecorino cheese and tomato,  Gricia, with pecorino, black pepper and pork cheek or or Cacio e pepe, which means “cheese and pepper”, the two main ingredients of the dish.


意面无疑是意大利最重要的食物,在罗马也并无不同:Amatriciana——由腌制的猪颊肉、佩科里诺奶酪和番茄制作而成的意面基础酱汁;Gricia——由佩科里诺奶酪、黑胡椒和猪颊肉制成; Cacio e pepe—意思是“奶酪和胡椒”,也是这道菜的两个主要原料。

But meat is an important ingredient as well in the Roman cuisine and can be easily found as an ingredient, like in Pasta alla Carbonara, made with eggs and crunchy guanciale (pig cheek), or as a main meal, like in Saltimbocca alla Romana, or in  Coda alla vaccinara (“oxtail cooked in the way of butchers”) which is still one of the city's most popular meals and is part of most of Rome's restaurants' menus.


猪肉是罗马菜品中的重要成分,很多菜品中都有它的身影。比如意式咸肉面,使用的就是鸡蛋和脆脆的guanciale(猪颊肉),或在小牛排配火腿和罗马式屠户牛尾等主食里。这些菜依然是这个城市里最受欢迎的菜品,而且在大部分罗马餐厅的菜单上仍拥有一席之地。

But, since the cuisine pushes its roots back in the history of the area, more popular are, of course, less noble parts of meat which in the past were cheap and more affordable for the families.


但是,由于食物根植于当地的历史中,所以更受欢迎的反而是那些便宜些的,不是肉中最好的,普通家庭也能承受起的肉。


And from here we have tripe, the edible lining from cows stomachs, or 'coratella', which is a mix of offal, all cooked together and served.


因此,牛肚——牛胃部的里子,或coratellao——杂碎,都是餐桌人们喜爱的菜品。

Lamb is also a very popular part of Roman cuisine, and is often roasted with spices and herbs, dish that is popular with the name Abbacchio.


罗马美食里当然少不了羊肉啦!人们喜欢把羊肉加了香料和药草一起烤着吃,其中有一道代表性的菜名为Abbacchio。

As for products, of course, we can't not mention one of the most used ingredients in the Roman cuisine: Pecorino Romano. Pecorino Romano it's a hard, salty cheese made of sheep milk with a sharp taste, perfect on saucy pasta like Carbonara.


罗马有还有一种不得不提的原材料——佩科里诺.罗马诺奶酪:咸咸的用羊奶制成的干奶酪,味道非常浓郁,搭配意式咸肉面口味特别棒!
